I swear by this caramel sauce recipe. No need for thermometer you can trust your eye. Look for the golden brown colour while making the caramel. If you take it off the heat a little sooner the caramel flavour won’t be developed & if you keep it for a few seconds more it will burn. Once the sugar starts changing colour don’t leave its side. It changes from light golden to amber golden very quickly.
